Rice in Coconut Milk
Coconut milk is cooling, soothing and nourishing, perfect during summer time.
Vegetable Rice with coconut milk is easy to digest and assimilate on hot summer days. It cools heat and irritation in the digestive tract and thereby cools the blood. Try this Pitta Pacifying recipe.
•1 cup Basmati Rice
•1 cup thick coconut milk
•11/4 cup water
•Spices - 1 teaspoon Cumin seeds, 2 cloves, 1 green cardamom pod
•1 medium sized carrot chopped
•1/2 cup green peas and corn
•10 Beans chopped (optional, you can choose vegetables of your choice)
•3 teaspoons of Ghee ( or oil or coconut oil)
-Wash and soak Basmati Rice
-Add ghee to a pot. Fry cashews until golden. You can set aside if you like crunchy cashews.
-To the same pan, add spices and fry till they turn fragrant.
-Add chopped vegetables and fry for 2-3 mins, add washed and soaked rice.
-Pour coconut milk along with water add salt.
-Cover and cook until fully done on medium flame.
-Allow the coconut milk rice to rest for 15 mins then fluff it up with fork. Garnish with cashews and fresh coriander.
