Mixed Vegetables in Coconut Milk

As coconut is cooling and sweet, it is great for balancing Pitta. Try this Pitta Pacifying Ayurvedic recipe with Coconut milk.


Ingredients :

•Fresh Vegetables of your choice, I have used - cauliflower, carrots, French beans, potatoes, peas, onion, tomato

•1 tablespoon of coconut oil or Ghee

•1 tablespoon of Pitta Cooling spice mix (mix of Coriander seeds, Cumin seeds, Fennel seeds, dried mint leaves, cardamom seeds, turmeric powder)

•Salt

•1 teaspoon of grated ginger

•2 cans of coconut milk


Recipe :

Wash, peel and cut vegetables in small cubes.

Boil or steam them until soft. Set aside. Slice the onion and tomato thinly. In a large pot, heat the coconut oil or ghee. Add ginger and onion stir until golden on low heat and then add tomato stir until soft.

Add the spice mixture and the coconut milk simmer for around two minutes.

Add steamed vegetables in and salt allow to cook for another 5 minutes.

Garnish with fresh coriander and serve warm with rice, roti or quinoa.


Enjoy warm.
